Meat Loaf

Do you remember the hamburger loaf we had last February? It was supposed to be Meat Loaf, but we forgot the bread crumbs! So it was really just a great big burger...and not very good. I admit it. This recipe --although it's clearly not Grammy's, was in her box, and it looks pretty good. Next time I make Meat Loaf I will use this recipe.

Meat Loaf
1 lb. ground beef
1/2 lb. ground veal
1/2 lb. ground pork
1 tsp. Worcestershire souce
2 eggs
1 1/2 cups cracker crumbs
3/4 cup catsup
1/2 cup warm water
1 pkg. dry onion soup mix
4 strips bacon
1 8-oz. can tomato sauce

Preheat oven to 350. Mix meats together by hand in large bowl. Add Worcestershire, eggs, cracker crumbs, catsup, water, and soup mix. Mix. Shape into a loaf in a shallow baking dish. cover with bacon then pour tomato sauce over the loaf. Bake 1 1/2 to 2 hours or until done. Serves 6 to 8.

Portuguese Chicken

Portuguese Chicken
1 broiler - fryer (2 1/2 lb) cut-up and skinned
1/2 clove garlic, crushed
salt, pepper, paprika to taste
1 cup orange juice
1/2 cup tomato puree
2 Tablespoons soy sauce
2 to 3 tsp prepared mustard
1 medium green pepper, chopped
2 small oranges, peeled & sectioned

Rub chicken with garlic and sprinkle with salt, pepper, and paprika. Put in casserole.
Mix orange juice, puree, soy sauce, mustard and green pepper.
Pour over chicken.
Cover, bake in 350 oven 50 minutes or until tender.
Add oranges. Bake 5 to 10 minutes longer or until chicken is tender and oranges are hot.

Makes 4 servings.
