Apple-Peanutbutter Fudge

This recipe came to Grammy from Viola Cummings of Worcester.

Butter a 9X9X2 Pan and set aside

1 6oz pk Semiseet
Chocolate Pieces
1/2 cup Peanutbutter
1/2 of a 10 oz jar of Marshmallow Creme
1 tsp vnilla
1 1/2 cup Sugar
2/3 cup Apple Juice

Mix in a large bowl Peanutbutter, Marshmallow, Chocolate pieces and vanilla and set aside.

In a 2- quart sauce pan combine sugar & Apple juice.
First butter all sides of the sauce pan.
Cook over Med. heat. Continue stirring so it won't burn.
Cook until it reaches the soft ball stage.
Then pour over chocolate mixture; Mix well;
Add Nuts if you wish; Pour in buttered pan.

Cool. Cut into squares. Makes 36 pieces.

Peanutbutter Fudge

(Butter an 8" Pan & set aside)

1/4 lb. Marshmallow
1/2 lb. Peanutbutter
1/4 cup flour
1 stick Margarine
1/2 cup Evaporated Milk
1 1/2 cup sugar

Mix in a large bowl the Marshmallow, Peanutbutter & flour and set aside.

In large heavy skillet put Margarine, Milk & Sugar.

Cook over Med. heat bring to rolling boil;
Then cook for 7 min. no more or less;
Keep stirring so it won't burn.

Then pour over Peanutbutter mixture, mix well;
add nuts if you wish; Pour into buttered pan.

Cool & cut into squares. Makes 3 lbs.

Confetti Quiche

Looks like Anne's writing...

2 cup shredded sharp cheddar
2 Tablespoons flour
1 1/2 Cup milk
2 Tablespoons chopoped peppers
1/4 teaspoon salt
dash pepper
4 eggs slightly beaten
1/4 cup green onion (scallion?)
Pepperoni

1 9" unbaked pastry shell

Toss cheese w/flour. Add eggs, milk, onion and seasoning.
Mix well.
Pour in pastry shell. Bake @ 350 for 1 hr (till set).

Old Time Indian Pudding

Cut from an old newspaper...no idea which one or when.

Into 1 quart of boiling milk sift 7 tablespoons yellow corn meal, 1 scant teaspoon salt, 1 heaping teaspoon ground cinnamon. Stir continuously. When well mixed, add 1 cup molasses and 1 pint of cold milk. Stir somewhat and if whey is desired to jell, turn in 1 more pint of cold milk, but do not stir. Bake slowly in an earthern closely covered baking dish for 2 1/2 or 3 hours. When cold the whey will cut as does fruit jelly.

Magic Cookie Bar

1/2 oleo melted in 9X13 pan.... I am assuming this means 1/2 stick, or in other words...4 tablespoons of margarine.

then...layer these ingrediants:
1 1/2 c graham cracker crumbs
1 cup chopped nuts
1 cup semi-sweet chocolate chips
1 1/3 cup flaked cocoanut

then pour over all 1 can of sweetened condensed milk.

Bake at 350 for 25 mins. Cool 15 mins before cutting. (2 doz. 1 1/2 x 3)

Meat Loaf

Do you remember the hamburger loaf we had last February? It was supposed to be Meat Loaf, but we forgot the bread crumbs! So it was really just a great big burger...and not very good. I admit it. This recipe --although it's clearly not Grammy's, was in her box, and it looks pretty good. Next time I make Meat Loaf I will use this recipe.

Meat Loaf
1 lb. ground beef
1/2 lb. ground veal
1/2 lb. ground pork
1 tsp. Worcestershire souce
2 eggs
1 1/2 cups cracker crumbs
3/4 cup catsup
1/2 cup warm water
1 pkg. dry onion soup mix
4 strips bacon
1 8-oz. can tomato sauce

Preheat oven to 350. Mix meats together by hand in large bowl. Add Worcestershire, eggs, cracker crumbs, catsup, water, and soup mix. Mix. Shape into a loaf in a shallow baking dish. cover with bacon then pour tomato sauce over the loaf. Bake 1 1/2 to 2 hours or until done. Serves 6 to 8.

Portuguese Chicken

Portuguese Chicken
1 broiler - fryer (2 1/2 lb) cut-up and skinned
1/2 clove garlic, crushed
salt, pepper, paprika to taste
1 cup orange juice
1/2 cup tomato puree
2 Tablespoons soy sauce
2 to 3 tsp prepared mustard
1 medium green pepper, chopped
2 small oranges, peeled & sectioned

Rub chicken with garlic and sprinkle with salt, pepper, and paprika. Put in casserole.
Mix orange juice, puree, soy sauce, mustard and green pepper.
Pour over chicken.
Cover, bake in 350 oven 50 minutes or until tender.
Add oranges. Bake 5 to 10 minutes longer or until chicken is tender and oranges are hot.

Makes 4 servings.
